Maca Cacao Flourless Protein Pancakes for 1

Who does't love pancakes! And how great life can be when it's protein packed on top of it. Here's my recipe for a maca-cacao flourless protein pancakes:

Ingredients

  • 1 large egg (organic ideally)
  • 1 ripe banana
  • 1/2 cup old fashioned oat (gluten free oat for folks with celiac disease)
  • 2 Tbsp chocolate protein powder (I make my own because I want to add the sugar I want in my recipes)
  • 1/4 tsb Maca
  • 1 Tbsp cacao powder (optional, for chocolate crazy lovers)
  • Dash of vanilla 
  • Coconut oil

Topping

  • Maple Syrup (optional)
  • Berries (optional)

Instructions

  1. Preheat skillet to medium heat, put coconut oil to prevent pancake from sticking
  2. Add egg, banana and oat to blender. Blend low for 20-30 seconds until banana is mashed and oats are grounded.
  3. Add protein powder, vanilla, maca and blend for another 30-45 seconds until smooth.
  4. Add 1/4 cup of mix on the preheated skillet and cook until you see bubbles and edges are set. Flip and cook for another minute or two.
  5. Top with your favorite fruits and some maple syrup, eat immediately.
(Notice that I @#$%? hate people who give ultra long description of everything else they do in life and I have to scroll for ten minutes before reaching the actual recipe... Won't happen here! Oh and I don't spend hours on presentation, I love to eat food when it's hot not look at it and find the perfect angle to shoot just to gain Instagram followers!) ;) 

 

BONUS!!! My Own Protein Powder Recipe

The base for my mix is (everything being either organic or wild):

  • 1/4 c. hemp protein powder
  • 1/4 c. pumpkin seed powder
  • 1/4 c. pea protein
  • 1/4 c. Sprouted brown rice
  • 1/4 c. Sacha Inchi powder

Then I add either of the two homemade superfood blend:

Choco-Maca

  • 1 tbsp.  Cacao powder
  • 1 tsp    Maca powder
  • 1/4 tsp Cinnamon ground

Vanilla-Mesquite

  • 1/2 tsp  Vanilla
  • 1 tbsp    Mesquite powder
  • 1 tbsp    Lucuma powder

* You may want to add stevia or some form of sugar...  *

1 tsp  Stevia (more or less depending if you want sweeter taste)
